Are there People who don't mind taking on an apprentice in the crafts they learn to help those of us whom are new to learn the various skills we are interested in pursuing or is it all basiclly hit and miss type of a situation.

Apprenticeship isn't an IG mechanic, just so you know.

However you can learn a lot by doing stuff the master [whatever] doesn't want to.

For example making ingots is something boring but which gives skill at lower levels - something an apprentice could do.

The answer to that question is that this is all an IG matter. Find a crafter and see if he'll take you in.
