Character growth and evolution

somethign i was wondering about and was curious how others felt.
Shouldn't the characters stats be evolving to some degree as the character and its personality does as well? let me give an example
A 6 yr old child is created. Like many children he (for this refrence the person will be a male) is very quick and agile, but due to being very young is not very strong or smart yet. now as the child grows and matures wouldn't it to some extent make sense that say.. if the child particpates in learnign crafts, an insrument, and even spendign tiem inthe library reading, his intelligence woudl go up while his agility goes down, or perhaps he apprentices himself to a smith, a miner, or logger, and starts working hard physically, thus his strength should go up, and maybe even his constitution as his endurance increases from the activity at a cost of what the child is no longer doing as much of, most notably agility.
I would naturally expect and stat adjustment to be very heavily justified and not somethign that woudl be changed willy-nilly, i just wondered what others thought about this.
