It takes you around the world to find branch if you do that. It may require decent farming level but it is really best to plant whole bunch of cherry trees and saw them all.

First you won't worry another person compete with you because you already killed them all. Second, a single cherry tree can provide at least 50 branches in general. However, I did saw down one new-plant cherry tree with two saw and another one with about 100. About every two cherry trees, you can level up in your carpentry.

Only trouble you may have is you don't have enough food or farming level is not quite good.

My character is a farmer. Not a very good one and probably doesn't eve have the right tools for the job. Though it is possible to to pick up new skills if needed or by accident. I had a mage let me see what he was reading and I accidently obtained "library research." Find me the right tools and I'll chop a few cherry trees for you. You know where to find me.

And if you chop a cherry tree with a hatchet, do the branches grow back then?

If i remember correctly, there is an X% chance of a tree fatality.

You can kill it with the 1st, or the 100th...

You put a cherry on the ground and pour a bucket of water on it. Very simple not brain surgery. If it does not work the first time refill the bucket and keep trying till the tree sprouts.
