i was wondering if once you choose at the beginning you cannot do anything else? i chose to be a fighter but now i cannot get any craftsman skills.

You can choose fighter and then gain other skills later. The main difference is starting items. Also, craftsmen get basic skill in some things I believe

does intelligence have anything to do with the rate at which you gain skills because i seem to gain skills faster with my character with high intelligence then with my character with low intelligence

Probably...but i dont really keep track of that stuff

if it does then i would like to redistribute the stats of my char. is there a way to do that?

I don't think so. Can only make new characters, cant switch attributes whenever you want on existing chars
