I know this sounds stupid but for my smithing skills, will they get better from making ingots and plates or from making actual objects like swords and scissors?

At the beginning, until you reach a certain skill, melting will raise your smithing skill too. but just at the beginning.

Also, has the system been altered recently because I just went smithing and it won't work. I have a crucible and mould in my belt as well as iron ore. I light the furnace and I have pincers in my hand yet it says ''you don't have the required tools to hand''

You need to put the crucible and pinces in your hand. You must have at least 1 iron ore and 1 coal in your belt.

Here's another dumb ass question.

where do I get the horn for orc and viking helms, and what do I need for a steel cap because it doesn't seem ingots or plates either or together work.... ha

And why make viking helms when you pick them up from mummies?

There are several kinds of viking helms, not to mention the ones in the mummy tomb are bad quality.
