How do you sell

when i am in game i try to sell by clicking shift the item then the NPC that didnt work. Then i clicked the NPC and then the item that didnt work. O i also never let go of the shift button

Depends what are you selling, they don't buy everything, and it is item then NPC's

I was selling a raw gem

You can sell cut gems, but not raw gems. To cut, you need to go to a gem grinder found in the basement of the library or the workshop and use the raw gem with the cutter. It is a hard and frustrating skill to learn though.
