I have a question about the pigs in Illarion. All of them I've seen so far (Bane, Vanima, etc.) drop leather every time, I believe, but not always meat and entrails. Every other animal drops it always. Are pigs supposed to only have a chance or is this a bug? Is it some lasting effect from that awful pig plague?

I actually loved it when they always dropped meat and entrails because there usually was some nice RP at the pig pens, at least in Trolls Bane. Now it is rare you see someone there at all.

The pigs are supposed to drop meat just randomly and not always.
This will change with the VBU though and leather will be the rare drop.

No at all, because you can't compare the current system with the updated crafting system after the VBU.
