I just wonder about if there is some maximum skill level. Is there a point, where no more swirlies would pop up, so its definitly the highest level?

Sounds like I need to train my fighting skill, too, to keep all my fingers.
edit: but i will only cook fish and vegetarianmeals, to max the skill, so you better eat halfs

But if you have maxed one skill, you're learning on and on. Don't know why but I've realized it with different chars and different skills.
So just watch the coloured bar behind the skills name, if it doesn't grow any longer, you have maxed it.

Disclaimer -
If you produce goods which are easy - you won't learn ANY skill at all.
So if you don't learn skill doing something - it could be you're doing only easy things. If you try something harder, you'll learn faster. If not even many 'harder' items work - then a matt is you!
